This is a unique wine of Sierra de la Salamanca's native Rufete grape along with Tinto Aragones, the local name for Tempranillo, from 60+ year old vines. Soft fruit balanced with minerality. Fermented with indigenous yeasts in Stainless Steel; aged ten months in French and American oak, unfined + unfiltered. A unique option for wine explorers to try something different from Spain. Siera de Salamanca is a tiny viticultural area and one of the youngest Spanish DOs, located in the Sierra de Francia mountains. Practicing Organic.

Para elaborar La Zorra, como no podía ser de otro modo, hemos utilizado dos variedades arraigadas a nuestra Sierra: La Rufete y El Tinto Aragonés (Tempranillo).

La media de edad de las viñas es más de 70 años, con lo que nos aseguramos producciones bajas con gran calidad de uva. 

La Zorra se elabora con Rufete, una uva de grano menudo, con la piel fina, agrupara en racimos no muy grandes, compactos y muy pegados al sarmiento.

La Zorra se embotella sin estabilizar, clarificar ni filtrar, para no robarle ningún matiz de color, aroma o sabor, con lo cual, con el tiempo podríamos encontrar algún tipo de precipitación totalmente natural.

In order to make La Zorra, as it could not be otherwise, we have used two varieties rooted in our Sierra: La Rufete and El Tinto Aragonés (Tempranillo).

The average age of vines is more than 70 years, which ensures low yields with great quality of grapes.

La Zorra is made with Rufete, a grapeseed grainy, with thin skin, grouped in clusters not very large, compact and closely attached to the shoot.

La Zorra is bottled without stabilizing, clarifying or filtering, so as not to rob it of any hue of color, aroma or flavor, which, over time we could find some type of totally natural precipitation.
