Burst of lemon drop, lemon zest, lemongrass, white flowers. Juicy and supremely zesty and vibrant with lime and ocean minerality on a linear palate. The Zárate Estate was founded in 1707, in the Val do Salnés zone, birthplace of Albariño. Today seventh-generation Eulogio Pomares is at the helm of this ancient bodega, focusing on creating Albariño with an incredible agibility factor. The grapes are harvested from 35+ year old vines, using no chemical fertilizers or herbicides and instead utilize natural teas to ward off disease. Wild-yeast fermentation keeps the essence of the area in the glass, aging on the lees brings texture and depth.

The Zárate estate was founded in 1707, in the Val do Salnés zone, birthplace of Albariño. The estate uses no chemical fertilizers or herbicides and utilizes natural “teas” to ward off disease.
"Fresh, balanced and very mineral Zárate Albariño is sourced from estate vineyards averaging over 35 years of age in the parishes of Sisán and Padrenda in Val do Salnes’ central core. With wild-yeast fermentations and aging on the lees, this wine offers a character and vibrancy almost unique to the region."

In fact, Pomares’ farming is almost fully biodynamic—he works the soil manually, uses cover crops for genetic diversity and makes his own biodynamic teas for vine and soil treatments. All new plantings are massale selections from the estate’s oldest vines.
