"An atypical terroir and a cool microclimate:

This property of just over 5 hectares is located on the foothills of the Montagne Noire massif, at an altitude of between 220 and 360 meters.
The influence of the Montagne Noire is essential. It brings cool air and moderates the Mediterranean climate. The days remain quite warm and the nights are cool. The temperature difference between night and day can reach 20 degrees Celsius. This temperature range results in slower ripening and allows for excellent phenolic maturity.

Depending on the plot, the soils are composed of schist or clay-limestone. Schist is desirable because it limits water stress and brings finesse and freshness to the future wine. Limestone soils provide a powerful structure.

Wines marked by their terroir.

The effects of altitude, the cold air of the Montagne Noire, and the quality of the soils are evident in the tasting of these wines. The slow and complete ripening of the grapes results in a harvest that is almost a month later than in other Languedoc vineyards. Minervois and La Livinière offer a beautiful balance, lovely freshness, and great complexity."
