Black plum, green herbs, lilac shrub, fresh strawberry. Palate has a garrigue-like essence, with persimmon and tart raspberry. William Downie represents the pinnacle of minimal intervention, site-specific pinot noir in Australia. He focuses on Gippsland, a sprawling region east of the Yarra Valley in Victoria. The Cathedral bottling comes from predominately King Valley from vines on old volcanic soil. Additionally there are grapes from Upper Goulburn where the vines were planted in 1998 on 400 million-year-old sandstone and shale & Yarra Valley from one of the best growers, Stuart Proud.  All fruit destemmed, native yeast fermented.
