Château Ollieux-Romanis "Lo Petit Fantet d'Hippolyte"
Located in Boutenac, just south of the village of Corbières in the Languedoc region. First planted to vine in the 11th century AD, Ollieux Romanis actually came into existence as a farm producing grains, olives, and mutton in Roman times, some eight centuries earlier. The Domaine flourished while tend to under the care of the monks, with their daily religious ritual of producing sacramental wine. The label for this wine is drawn by the winemaker’s son, Hippolyte. Organic. Blend of Carignan, Syrah, Grenache. Carbonic maceration with indigenous yeasts, aged in cement tank. Roussillon, France
