Sweet, charred bell pepper, red roses, peonies & lilies, savory herbs. Palate is meticulously structured and balanced, perfecting the balance between plush fruit with vibrant acidity and minerality. Winemaker Bertrand Sourdais (fifth generation) returned to his family's estate, Domaine de Pallus (est. ~1882) after making acclaimed wine at other wineries. He is passionate to express Chinon’s soil utilizing ancient traditions as well as re-inventing the processes.  He uses extended maceration to capture the "true" essence of Chinon. Les Pensées de Pallus is made only in exceptional years and in tiny quantities. Organic. 100% Cabernet Franc.
