TASTING NOTES:
A clean and elegant wine, demonstrating a smokiness and earthiness matched with a crystalline sense of saline minerality.

SoilType: Mica Schist
Exposure: North and south

Vinification: Whole cluster pressing using a pneumatic press, then fermentation between 18°-20°C in thermo-regulated tanks for 15 days. The wine is then gravity fed into another tank, where it is left to settle. Tanks range from 5,000L-15,000L.

Average Of Vineyards: Approximately 25 years old.


Duration And Aging Method: The wine rests sur lie for 8 months on the fine lees before bottling at the end of May. The lees are stirred 3 times a month.
